2 Minute Cinnamon Cake in a Mug

It is rare that I have a lazy Saturday morning.  Well this morning it is cold and just nasty outside.  Most mornings like this I like to bake and warm up the house but this morning I am just not feeling it… No I promise I am not sick.  Just enjoying my morning coffee and reading the paper.  But also want something good and warm that would make me feel just a little bit more cozy.  Yet again I am not really feeling the creative backing thing.  Plus I have a hair appointment to get dressed for  in a little bit.  So as I was going through my recipes, I found one I use to do many many moons ago that was simple and comforting I wanted to share.

Cinnamon Cake/Bread in a Coffee Cup/Mug

First find a coffee cup/mug you like does not have to be very big it can be a regular size coffee cup. Just make sure it is microwave safe!  Spray it with your favorite cooking spray. Now I like the make the icing first. You don’t really need icing on this but I have a little sweet tooth!

Icing:

  • 2/3 cup of powered sugar
  • 1 1/2 tbs milk
  • 1/4 tsp vanilla extract

Mix icing ingredients above in small bowl and set aside. (If it is to thick you can add just a tiny bit of milk at a time to get it to the consistency to drizzle)

Now in the Coffee cup/mug mix the following:

  • 2 tbs all-purpose flour
  • 1 tsp ground cinnamon **(see substitutions below)
  • pinch or dash of salt (not much really just a pinch)
  • 1 1/2 tbs of  flavored syrup – I like maple or cinnamon – You can even use Pancake Syrup)
  • 1 egg
  • 2 tbs of whole milk – You can use reduced fat milk or Almond
  • 1 tbs of melted butter – Sorry I always use real butter!
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder

(Make sure you mix it as well as you can with a fork).  Place in Microwave for 2 minutes.  Drizzle with icing.  Enjoy!!!

Note:  Always be careful when removing items from microwave they may be hot.

** Substitutions for Cinnamon – I have used Pumpkin Pie Spice Mix, Apple Pie Spice Mix.  It is up to you and your taste.  Be creative!

This weekend I am attending a Wind & Design class with my girls and a close friend.  The Studio encourages you go bring your own snacks and this is a mid-day class.  So since I have been good this week and have gone to Water Aerobics twice and started my Belly Dancing Class (Yes I know this is exercise!)  I wanted something good to snack on.  So I went to my favorite summer time dip that is sooo good but also not bad for you!  I so hope you enjoy this as I know we will during our class!  Plus it goes great with wine and pita chips!

3 Bean Dip

  • 1 can of Pinto Beans, drained
  • 1 can of Black Beans, drained
  • 1 can of Black Eyed Peas, drained
  • 1 small can White Shoepeg Corn, drained
  • 2 cups diced up cherry tomatoes (Any type tomatoe will work!)
  • 1 small red onion diced
  • 1 jalapeno, minced (removed the seeds first)
  • 1/4 cup (or to taste) of fresh minced cilantro
  • 1 small to medium size avocado,  peeled, pitted and diced up small
  • 4 tables spoons of olive oil
  • 2 tables spoons of red win vinegar
  • 1 fresh lime or about 2 tables spoons of Key Lime Juice
  • Salt and Pepper to taste

Mix the above ingredients in a large bowl. Cover and chill for about 15 to 30 minute and serve with chips or pita chips.  If you leave it over night make sure you stir it up, the juices will settle to the bottom of the bowl.

**If you do not like the bite of the jalapeno pepper, you can replace them with, red, yellow and green bell peppers.

Earn Money Online and Save Money for Christmas

We all say we are going to do it.  We think about it and start it.  In reality we start it and never finish it. We decide it is too much work or we just plain forget about it.

Well this is my second year doing “It”.  Okay, I guess I do need to tell you what “It” is!

I saved for Christmas doing a few simple things.  Yes it paid off again this year!  Here is what I did and I am continuing this for the 3rd year in hopes of more savings than last year!

So here is what I started 2 years ago. (I have updated this)

  1. First thing I did was to check with my bank to see if they had a Holiday Savings program.  Which they did, so got the information and took it home to look it over.  If you are like me we live from pay check to pay check and not really any give or take.  But I deiced that if I packed my lunch for work instead of eating out and cut down  my Starbucks run that I could afford at least $25 or more every other week. (When I have had extra I have put a little more in the account).  After I while I did not miss it and I loved having the little extra  money in my pocket and money to put up!   But paying for college and girls in general.. you know how that goes!
  2. Then the second thing I did was searched the web and found a few good programs that allowed me to earn points to redeem gift cards.  I found a few good ones and a few that well did not work.  Here are the ones I found that worked for me.
  3. **Update**  I also found out my Credit union has a Point program with my debit card.  So every time I use my Debit Card to shop or pay bills I earn point which I then can redeem for cash or gift cards.  I earned enough points to get $100 cash! Love it!  So double check you Banks, Credit Union and Credit Cards to see if they offer any programs!

**But note I did open up a separate email account just for this, so my main one did not get hit hard with junk mail **

Here are my Updated top picks for sites that really do pay off!

SWAGBUKS.  You can read emails watch videos and search using their search engine to earn swagbucks. Then you can turn them in for gift cards to use online. Some do not like the way they do their gift cards are, I don’t mind.   Most of them when you have enough points to redeem they send you an email with a code of like Amazon or Walmart.  I do most of my shopping online when do so it is easy for me.   They have a great list of gift cards to choose from in increments of $5, $10, $15, $25 and $50 etc.  Some of the cards are VISA, Kohls, Walmart, Target, Amazon and so many more to choose from. (Note Yes you need to spend a little time on this each day by clicking on links, watching video and taking a few surveys) But to me they are fun and I learn a few things and you can even earn points for shopping on the web or cutting grocery shopping coupons and using them.

** SWAGBUKS  – The first year I earned enough points for: $250 in Visa Gift cards and $100 in Target Gift Cards.  Which I used to shop online for Christmas gifts. My Update for $$ for 2016 – $300 in Visa gift cards.  A little less from the year before but it still was extra money!

EBATES – If you do a lot of your shopping online you will love this site.  You get paid any where from 1% to 6% or more cashback for shopping thru their site.  Like if you wanted to order something from Kohls or Target online you click the link to the store’s website and you can get 6% cash back from Kohls or 3% cashback from Target. The %’s do change and sometime they double.  And they have deals of the day and hundreds of Websites to shop from!  They will also let you know if there are coupons for that site.     You get paid every three months as long as you have over $5.01  they will either send it to your paypal account or send you a check.  It is a Win Win….. Ebates even features Groupon with 6% cash back.  (I have not tried Groupon but I have heard from a few you can find some good deals).  Plus most of the time they have signup bonuses to get you started off like a $10 gift card.

** Update This past year I receive $243 in my paypal account!

Walmart Savings Catcher!  – Yes I Love shopping at Walmart! I am lucky enough to have a Super Walmart near so I can do all my shopping in one place!  One of the sales clerks told me about Walmart Saving Catcher program.  You shop at Walmart then scan your receipt into the Savings Catcher app on your phone.  Then they go out and compare price with other competitors and if they catch the price lower at another competitor you get the difference.  You can then save up your savings and transfer them to a Walmart Card for a Bluebird Card.  I was also lucky when I signed up they had a deal that if you signed up for a free BlueBird card (you can only use this card at Walmart and it is sponsored by AmercianExpress) you get double your savings.  For a limited time. (It was free and no hidden charges).   Also what is really great is your Walmart Cash does not expire! So I am still saving mine and putting the savings I get on my BlueBird Card and can’t wait to go shopping.

2015: I earned over $150 cash back that I used at Christmas to by stocking stuffers and a few other things needed around the house for out of town guest!

2016 Update.  I earned $97 by the 1st of December. Yes I used it for stocking stuffers.

MyPoints:  There are several ways to earn from MyPoints, Clicking on emails, taking surveys, clipping coupons and also shopping online. They even give you large amounts of points for purchasing gift cards thru their site.  It does not get any easier than this.  I tend to do the emails about once a week, it only takes me a few minutes to open them and click the links.  If I have time I will take a survey they send to my email and earn points for taking it.  When I shop online I will either go thru MyPoints, SwagBucks  (sometimes they don’t always have the stores I want) I always use my EBATES!!!!

This past year 2016 I was able to cash in my points for $100 in gift cards!! Win Win

SurveySavvy :  This program so far has worked for me.  They email you surveys or you can download an app that will let you know when they have surveys available.  I started in January with this on and so far I have over $100 in my account.  When you are ready for the money you just request a check! Also they have weekly and Monthly drawings for $$ prizes!

** This past year 2016 I recieved 2 $100 check!  Yep $200 for doing surveys!  And right now I have $59 in my account and building!

 

(2016 Update on this part) I was not able to do as much canning as I would have liked due to the weather and lack of local fruit.  I was not able to find anything new online that worked for me. But I did make sure that I looked for coupons when shopping for Christmas presents and bought some things early when they had good sales.

(For 2016  the family was ready and even a few returned their baskets with the empty Jars.  So this is something I will make and effort to do each year!) I have also came up with a few other ideas that did get me a little ahead of the gifts for family and friends which is my homemade jellies, jams, salsa and green beans. My gifts from the heart!

This year 2016 I have decided to check out a few more ideas and websites.  I will keep you posted as I find them and see if they work!  But don’t forget using your loyalty cards at grocery stores and coupons!  Some of my family has really been able to stock up on things and save by using Store apps like the Dollar General store… I will post some of her savings her soon.  I am in the process of checking out and App call Checkout51 and a few more I will let you know if they work… Wish me luck!

Now if someone can just tell me how to add more time to the Holiday Season!  LOL Guess I need to start thinking about an Idea for this! Can’t wait to see what this Next Year will bring!  Good luck all!

Easy Stove Top Homemade Mac and Cheese with Bacon

Yes I am one that loves comfort food! And yes I said BACON.  I have been making this for so long that I could not even tell here were I found the recipe.  Please I have made some adjustments to fit our taste and budget!  So I am going to do my best and hopfully you can follow and make this yourself and see just how easy it is!

First that will make a 9  x 13 casserole dish greased (spray with cooking spray).  You will need the following:

8 pieces of cooked bacon (Yes I am sure you can use turkey bacon) diced up.

2 tbls of bacon grease (drippings)

1 small onion diced up (I use sweet onions)

1 tsp of minced garlic (yes mine comes from a jar already minced up for me)

2 tlbs of all purpose flour

Salt and Pepper

3/4 cup of Whole Milk

3/4 cup of Heavy Whipping Cream

3/4 cup shredded mild cheddar cheese

3/4 cup shredded white cheddar cheese (I use the shredded white vermont cheddar)

1/4 cup of shredded Parm/Regino Mix Cheese

1 box of noodles (I use penne pasta)

If I do not already have cooked bacon in the freezer I cook the bacon and put aside on a paper towel to drain and cool.  I keep 2 tlbs of bacon grease in the pan the rest if there is more I put in a mason jar that I keep in my refrigerator for other things I cook. I start the water for my pasta first and sprinkle salt in the water.

I add my onions to the bacon grease and cook them for about 2 minutes then I add the garlic and cook that for about 1 minute.  I slowly add in the flour always stirring and add salt an pepper to taste.

As the flour is mixing with the onions I start adding a little milk then a little cream at a time continually stirring, until I have added all the milk and cream in.

Reduce heat to medium and you will need to keep stirring for about 10 minutes. The sauce will get thicker  and thicker.

As soon as this part starts the water is ready for the pasta and I add that in and cook for about 7 to 8 minutes.  I try to time this to end the same time my sauce is done.

When ten minutes is up turn Off the heat under the sauce (remove from burner is you have an electric stove) and drain pasta.

Now add the cheese and bacon to the sauce and mix well.

Add the pasta to the cheese sauce and mix well, then pour it out into the greased 9 x 13 dish or pan.  Sprinkle with more Parm/Reg

Place dish or pan in the oven on boil and watch closely it on take a couple of minutes to melt the cheese you added on top and get a light brown. (You do not have to do this step if you don’t want to).

You are ready to serve it!  In my house we never have any left overs of this!  I swear my girls and my son-in-law can smell it from miles away!

(This is a draft, I am not really sure where to start — also that is my problem! So many ideas and so little time. So I am trying to jot down my thoughts and ideas what I want to say). Yes this was me 1 year ago when I first started to blog. I did okay for a few weeks then life took me on a little detour. But I am back and I want to continue this journey and see where it will lead me.

So bear with me on my journey of Re – starting my own blog site.

Hello, I would like to introduce myself, I am Sue Campbell a wife, mother of three beautiful girls! I work full time and lead a very active life with my family and friends. I love the outdoors. I hunt, fish and well just love the being out during the spring, summer and fall. A perfect spring/summer/fall Friday or Saturday evening for me is fishing and watch the sun set. Winter is another story for me! So I bake and decorate cakes on the side and I have just started to get into making pastries ” like croissants, biscotti and cinnamon rolls have been my starters! I dabble in a little of this and a little of that! SugarVeil Lace Icing, I discovered this by accident when I was ordering a mat for doing a cake decoration and ordered the wrong thing.  But it so happens it turned out to be a good thing for me for I ordered more which I think was worth the initial investment.

So I wanted to share my first experience with SugarVeil Icing.  Well at least a picture of what I was able to create my first time using it.  I am still practicing and will have more feed back, but for now here is a picture of my first time using Sugar Veil Lac Icing on a cake I did for my daughters Birthday!

Homemade Cake and Cupcake Stands

Cake plates and stands can get pretty expensive.  I needed to a few to display my cupcakes and cakes for an event and did not want to blow all my profits on buying cake stands that would end up being stored in my Cake Room (converted bedroom to store and organize all my cake and baking supplies). Now mind you storing them is not problem.  One of these days I am going to open up my own bakery and these will be beautiful accents to the decoration…Yep I know dreaming again!!!!

So I decided I would go on a little trip to the Goodwill and Dollar store to see what I could find and on a budget!  I have made these before and even given them as gifts.

Supplies: (for cake plate)

  •  Plate (any size or color)
  • Glass (any type glass, candle stick or vase that will hold your plate with out tipping over easily)
  • Glue (Make sure it is an all purpose clear drying glue)  I used  Loctite All Purpose G02
  • Paper, pencil and scissors (you may not need them but it depends on the shape  or type plate you may have.

I found my plate ($1.00) and Martini glass ($1.00)at my local Dollar Store.  They glue I purchased at my local hardware store ($4.98) so for a total of $7.00 and some odd cents I am on my way to creating a cake plate to display one of my cakes. The glue will do more than just this project, so you could really say this cake plate will cost me about $2.50 to make!

  1. First I wash and remove any stickers from my glassware.  (I let mine air dry so that I would not get any lint on them drying them with a dish towel.
  2. Next I turned the plate upside down and determined where the center of the plate is. Note:  If you have a solid plate and you want to make sure you have the center.  Take the plate and put it face down on a piece of paper and trace it.  Then take your scissors and cut out what you have traced.  Then fold it in half and then half again. When you open it you will have the center.
  3. I then take my glass and figure out what is the best way to attach it(which way will be more stable).  I place my glass up right with the plate on top and take a step back then I turn the glass upside down and see if it is stable and if I like the way it looks.
  4. Once you have determined the center of the plate and which way you want to place your glass, candle stick or vase. You are ready to glue!
  5. Next place a small line of glue around the edge of the glass that will be attached to the plate.  (Make sure you read your glue’s instructions and for drying times!)
  6. Place the glass in the position you wish it to be in and let dry.
  7. Once it is dry you can turn it over and you are done!

Cupcake Display (single cupcake for a gift)

I basic did the same as above except I added a few more pieces.

Small glass place ($1.00) Small glass cup $.50, Larger glass Cup $1.00, a wooden knob $.25 and some silver spray paint I already had on hand and glue I had used with the previous project. So for about $2.75 I made a cute cupcake holder that I gave as a gift to my of my special friends as a thank you!  Yes of course it had a special cupcake in it!!!

On this I used the smaller cup as my base with my plate and the larger cup I used as my dome that I painted and glued my know on.

So be creative, you may even have a few plates, glass, cups and saucers lying around or you can certainly take a look at your local goodwill or dollar store!

Just do it! Saving and Earning Money that Work!
